Grown at elevations of 1,700–2,200 meters in Ethiopia’s Sidamo region, this washed (wet-processed) Arabica delivers a bright, clean, and vibrant cup. After harvesting, the cherries are fully depulped and fermented to remove the mucilage before being carefully washed and sun-dried, enhancing the coffee’s clarity and accentuating citrus, floral, and tea-like notes. Processing: only ripe cherries are handpicked to ensure the highest quality. The outer skin and pulp are immediately removed, and the beans are fermented in water to break down the mucilage. After fermentation, the beans are thoroughly washed to remove any remaining residue and then sun-dried on raised beds until they reach optimal moisture. This meticulous process results in a clean, bright, and nuanced cup with balanced acidity and elegant floral and citrus notes, showcasing the coffee’s clarity and origin character.
